Ingredients of Naan khatai
- It's 1 cup of maida / all-purpose flour.
- You need 1 cup of besan/gram flour.
- It's 1 cup of sooji.
- You need 1 cup of powdered sugar.
- Prepare 1 cup of ghee.
- Prepare 1 tsp of Elaichi(cardamom) powder.
- Prepare 1 tsp of baking powder.
- Prepare 1 tsp of baking soda.
- It's 1 tbsp of milk.
- It's 1/2 cup of Dry fruits.
In its authentic recipe, ghee, maida, rava (sooji), gram flour (besan) and sugar are used but nowadays it is generally prepared without using gram flour and rava. The word Nankhatai is derived from Persian word Naan meaning bread and "Khatai" from a Dari Persian word meaning Biscuit. In Afghanistan and Northeast Iran, these biscuits are called Kulcha-e-Khataye. Kulcha is a type of Indian bread similar to Naan.
Naan khatai step by step
- Take a bowl and seive all dry ingredients like maida, besan, sooji and sugar, baking soda, baking powder.
- Now add ghee and make a soft dough.
- Now add elaichi powder and milk and knead well.
- Cover the mixture and let sit for 10 mins. In this time place a heavy bottomed kadhai on gas and pre heat for 10 mins.
- Then take a plate and grease it with ghee..
- Make small balls from dough and press little bit and add dry fruits on top of it..
- Now place all the nankhatai in a plate and put this plate on kadhai. Close the lid and bake for 20 mins on low flame.
- After that take out plate carefully and let cool down.your naankhatai is ready to serve...
Combine flour, sooji, salt, powdered sugar, and vanilla essence in a large mixing bowl. Add ghee and mix until well blended. Knead until it forms a soft pliable dough. Much like shortbread Naan Khatai also relies on butter or Ghee as the binding agent. The result is soft crumby textured biscuit,much like custard biscuits.
